1 whole cooked rotisserie chicken
1/4 cup mayo
1/2 cup plain greek yogurt
1 cup small-diced celery (about 2 stalks)
1 1/2 Tablespoons chopped fresh tarragon leaves
or 1 1/2 teaspoon dried tarragon leaves
2 teaspoons salt
1 teaspoon pepper
Bread of choice
Remove meat from chicken and shred or chop into bite-sized pieces. Place the chicken in a bowl and add the mayo, yogurt, tarragon, celery, salt and pepper. Toss well.
Spread chicken mixture on bread. Top with salad leaves and enjoy!
